What are you going to dream about?

IMGP6179.jpgMy daughter climbed in bed with us and as I snuggled her I heard a cackle! I jolted up to make sure it wasn’t a cry… when I then saw the biggest smile ever on my 3 year olds face.. she was sound asleep, she laughed again and you could see pure joy on her face. I desperately wanted to know what she was dreaming about, but didn’t want to wake her at the same time, so I softly whispered

“what are you dreaming about that made you laugh”

She replied eyes still closed

“Horseys, unicorn horseys! With rainbow hair!”

I said “wow” and she opened her eyes and told me:

“unicorn horseys are FAST and STRONG! ”

“Yes they are” I said “now go back to sleep and dream more about them”

She then Snuggled in close to me and asked “what are you going to dream about?”

………..

mmmm “Horses too” I said as she fell back asleep

What do I want to dream about? My insomnia or “mom brain” has already kept me up past midnight…

what should I dream about.

If I could choose?

As I thought this, a memory came back to me of my older sister and I sharing a room together as kids, and once we were in bed in the dark we would ask one another what we were going to dream about that night. We would both pretend to open a filing cabinet in our mind and pick one of the fun things in our memories. Mine was usually animals, Scooby doo, tom and jerry, or some fun memory I had. Then we would close our eyes and dream about what we had chosen.

When did it get more complicated than that?

As I lay there thinking of what I wanted to dream about as an adult… I really couldn’t come up with much.. what dreams did I have? The obvious; debt free (boring) adorable kids, (duh every day) sweet hubby, cooking, hmmm… hobbies, a clean house, A spa day! But none made me feel as happy right then as that smile my daughter had on her face while she dreamt about unicorns.

I want to fall asleep and dream of a mystical land and forget adulthood.

Then I thought about my dreams for the future, for tomorrow, or for right now. What am I going to dream about (we’re getting deep here guys)

My days have seemed mundane, the same…. happy, but not laughing happy.

Let’s not lose our dreams

I’ll never forget the lesson my 3 year old taught me at something past midnight o’clock..

To never stop asking the question “what are you going to dream about”

Even if it is to just help you get to bed one night… I’m dreaming of a wonderful laughing happy day tomorrow!

and I think I’ll dream of unicorns with rainbow hair tonight!

Whole Foods pudding

Whole food pudding

When I was little my mom would cook that cook and serve vanilla pudding I loved eating it warm out of the pot with her sometimes we would sit down and just have a little bowl because usually she was making it for something and We couldn’t eat the whole thing!

Well I’ve been having some tummy issues and I’ve been trying to go sugar free dairy free gluten-free to see if that helps. I will be adding his back in my diet slowly eventually if they don’t affect me. however, I made this delicious Whole Foods pudding that I eat warm out of the pot and I can eat as much as I want and it’s wonderful….. so I’m giving you guys the recipe so you can feel wonderful too.

Recipe:

• One apple

• 2 bananas

• 1/2 a cup of cashews

•a half a cup to 1 cup of water

• salt,

• a splash of lemon juice

• 1t or more cinnamon

• vanilla

Chop up apple and bananas add to a High speed blender with a half a cup of water to start and the cashews, blend until very smooth.

Pour into a sauce pan on the stove and heat to a boiling. stir constantly the mixture will get very thick. add cinnamon; however much she would like, some lemon juice to preserve the banana, a dash of salt, and some more water if it is too thick.

Let it boil for a few minutes, stirring constantly. take off of the heat and add a splash of vanilla. Enjoy warm! store in the refrigerator for a few days and warm up to eat.

The best chili

This is the best chili ever and it’s versatile too! Make it to your liking and remember to make a large skillet cornbread to go with it because chili and cornbread JUST GO TOGETHER.

  • •1 lb ground meat (we use elk or deer but beef is just fine)
  • one sweet onion diced of your choice or onion powder for those picky eaters
  • celery diced or celery seed
  • 4-8 or more cans of beans, juice drained! your choice! Black bean and navy are my favorite kidney beans is hubby favorite, grandma always used bushes chili beans, this part is totally up to you. I use up to 8 cans sometimes depending on if you want a thin juicy chili or a super thick chili
  • 1 cup ketchup
  • 1 -2 quarts tomato juice (home canned)
  • 2 T mustard
  • 1T about of Worcestershire sauce
  • Splash of vinegar
  • 2T chili powder (depending on your taste more or less)
  • 1/4 c brown sugar more or less to taste
  • Salt and pepper
  • Garlic powder optional to taste

Raising Farm kids

Raising farm kids. I knew I wanted to do this from the beginning. When my daughter was very young if anything was wrong, going outside would usually fix it. Kids just crave Something about the outdoors.

Seeing them chase after our ducks puts so much joy in my heart. (Hard for the poor ducks sometimes)

But they just love them! And who wouldn’t want those cuddles.

We raise our animals for eggs and meat. My sweet daughters love for our animals is truly incredible. Yet she understands why we use them for meat and why we take such good care of them.

Currently we have chickens for eggs, ducks for meat, and Rabbits for meat. We have just moved into our house that allows this life style and as winter is about to hit we’ve put a hold on goats lambs and horses until the spring.

we also must have some adorable barn kitty’s.

My 3 year old Daughter collects eggs on her own. I love the responsibility farm life gives to children. I’m not exactly jumping out of bed to open the chicken coop …. but they are.

Both my children will spend hours in the barn and pasture, chasing animals, kicking dirt, it’s amazing how little they need to be happy out there.

All while piles of toys sit inside, some collecting dust…

isn’t it interesting that kids will play with said toy for only 10 minutes sometimes but can spend more than 2 hours uninterrupted outside? With nothing but Gods creations.

I look around at how close they are building homes these days and how much tv is being used. I’m not going to act like my kids don’t watch tv, they do, but we do limit it and they never choose TV over going outside.

Kids need room to roam

My 5 top things for happy kids:

• Someone to take them outside

• Time, someone to let them stay outside a while, (can be hard when your to do list is calling you inside)

• no fuss to keep their clothes clean (invest in a pair of overalls, or just wash whatever they wear out)

• You gotta get an Animal to take care of and love on.

• Responsibility, a reason for putting your shoes on and getting outside. Some examples would be to collect eggs, feed water said animal, to get vitamin D, fresh air.

it doesn’t have to be complicated.
